When the garden becomes the first course

An Andalusian tomato soup that asks for ripe vegetables, good olive oil and a little patience in the fridge.

Gazpacho

An uncooked first course

Gazpacho is an invitation to pay attention to the tomato. Without roasting or simmering, its ripeness stays unmistakable. Taste a piece before blending: the finished soup can only be as generous as the vegetables you start with.

Andalusia, in a bowl

Spain’s official tourism recipe locates this version in Andalusia and uses bread, green pepper, garlic, olive oil and sherry vinegar. Blending turns the soaked bread and oil into body rather than a visible garnish.

Leave room for adjustment

Start with less water. You can loosen a thick soup at the end, but you cannot easily recover one diluted too far. Salt and vinegar should sharpen the vegetables without overwhelming them.

Pass the garnishes

Small bowls of chopped cucumber, tomato and pepper let each person finish their own serving. Our version leaves out the optional egg garnish. It is a researched adaptation for the everyday table, with no claim to represent every regional gazpacho.
